This simple salad makes an elegant starter or main course dish.

Ingredients

  • Dressing

  • 2 slices of white bread

  • 4 tbsp milk

  • 2 cloves of garlic, peeled

  • 1 lemon, juice and zest

  • 6 oz fresh shelled walnuts

  • 150 ml virgin olive oil

  • Seasoning

  • Salad

  • 10 slices Parma ham

  • 50g diced bread, cubed

  • 25g butter

  • 150g mixed radicchio and rocket

  • 5g picked flat leaf parsley

  • 100g cooked French beans

  • 100g blanched and peeled broad beans

  • Virgin olive oil

  • Parmesan shavings

Method

  • 1.

    To make the dressing, tear the bread into the food blender and moisten with the milk.  Add the garlic, lemon and walnuts and blend to a paste, adding the olive oil and seasoning

  • 2.

    Grill the Parma ham until crisp. Fry the cubed bread in a little butter until golden brown.

  • 3.

    Place the salad leaves and the beans into a bowl and add the dressing and season and mix.

  • 4.

    Place into the plate and top with the crispy ham, parsley and the croutons.

  • 5.

    Drizzle with olive oil and top with the Parmesan shavings
