This lighter version dill sauce is delicious with seafood, vegetables and salads.

Ingredients

  • 15g/1/2oz sugar

  • 200ml/7fl oz red wine vinegar

  • 80g/3oz Dijon mustard

  • 400ml/141/2fl oz olive oil

  • salt and freshly ground black pepper

  • 2 large tbsp fresh dill, chopped

Method

  • 1.

    Whisk the sugar, vinegar and mustard together in a bowl.

  • 2.

    Slowly whisk in the oil until smooth and thickened.

  • 3.

    Season, to taste, with salt and freshly ground black pepper and add the dill.
