Rocket Pesto

This is so simple but transforms whatever it touches into a real treat.


  • 125g rocket, stems trimmed and roughly chopped

  • 2 tbsp chopped fresh flat-leaf parsley

  • 2 garlic cloves, finely chopped

  • 50g pinenuts, toasted and roughly chopped

  • 100ml extra virgin olive oil

  • 50g/2oz parmesan, grated

  • Maldon salt and freshly ground pepper


  • 1.

    Place all the ingredients except the Parmesan in a food processor.

  • 2.

    Season generously with sea salt and freshly ground black pepper.

  • 3.

    Blitz the ingredients in the food processor

  • 4.

    Finally fold in the Parmesan.
