A gorgeous creamy cold dessert. Serve in pretty cups with a brandy snap.
Heat in a large pan for 8 minutes the coffee, eggs, milk, cinnamon sticks and sugar. Keep stirring. Add the vanilla essence and rum and stir until the mixture coats the back of a spoon.
Now plunge the pan into iced water to cool the mixture down quickly. Place in the fridge for 24 hours.
Beat the whipping cream and the mixture together, making sure you reserve a little whipping cream.
Ladle the mixture into the cups, place a little whipping cream on top, dress with chocolate powder and serve with a brandy snap.
