Blend and sieve Nam Prik sauce ingredients and set aside.
Heat vegetable oil in a hot fry pan or wok and saute all ingredients very quickly.
Spoon Nam Prik sauce over plates and divide stir-fried vegetables.
Heat omelette pan to medium heat, add 25 ml vegetable oil and pour in one quarter of egg mix (omelettes can only be made one at a time).
Stir with fork and keep mix soft, place 50g crabmeat in centre.
Season to taste with salt and pepper.
Fold omelette over and tap down on to garnished plate.
