Jack's Mudcrab Omelette

Ingredients

  • Omlette

  • 200 g mud crab meat all shell removed

  • 100 ml vegetable oil

  • 12 large Eggs whisked

  • Salt

  • Stir Fry

  • 20 g Pickled Ginger cut into fine strips

  • 40 g bean sprouts

  • 4 oyster mushrooms torn into fine strips

  • 0.5 red capsicum julienned

  • 0.3 medium carrot peeled and julienned

  • 0.5 small salad Onion peeled and finely sliced

  • 40 g snow pea shoots sprouts

  • radish strips for colour

  • 20 ml vegetable oil

  • Nam Prik Sauce

  • Palm Sugar

  • Ketchup

  • Coriander root

  • Garlic

  • Lime juice

  • fresh Ginger

  • 4 sprigs Coriander

Method

  • 1.

    Blend and sieve Nam Prik sauce ingredients and set aside.

  • 2.

    Heat vegetable oil in a hot fry pan or wok and saute all ingredients very quickly.

  • 3.

    Spoon Nam Prik sauce over plates and divide stir-fried vegetables.

  • 4.

    Heat omelette pan to medium heat, add 25 ml vegetable oil and pour in one quarter of egg mix (omelettes can only be made one at a time).

  • 5.

    Stir with fork and keep mix soft, place 50g crabmeat in centre.

  • 6.

    Season to taste with salt and pepper.

  • 7.

    Fold omelette over and tap down on to garnished plate.
