Try this recipe for a savoury French cake prepared with blue cheese and ground almonds.
Melt the butter and simmer until golden and nutty in colour.
Place the almonds, flour, icing sugar and vanilla into a mixing bowl and pour on the nutty butter. Mix well to form a thick paste.
Whisk the egg whites until stiff peak stage. Fold in the egg whites one spoon at a time and then crumble in the stilton and mix in well.
Pour the mixture onto a parchment paper lined baking tray and bake at 180c for 15 to 20 minutes or until golden and springy.
Once cooked remove from the oven, allow to cool slightly and cut out small discs and place onto a cooling wire. Dust with icing sugar.
Try serving these with port jelly.
