The simplest way to make truffles is to bring milk chocolate and cream together then dust with mixed spices or roll in cocoa powder.


  • 325g best quality milk chocolate, like Green and Black or Divine

  • 250g double cream


  • 1.

    In a heavy bottomed saucepan bring the cream up to simmering point.

  • 2.

    Cut the chocolate into evenly sized chunks and place into a glass mixing bowl.

  • 3.

    Pour the simmered cream onto the chocolate and mix well until smooth and glossy.

  • 4.

    Place in a cool place but not the refrigerator to cool and set.

  • 5.

    When set and cold take teaspoons of the truffle mixture, roll into balls and dust in the ground spices.

  • 6.

    Place aside to set.
