To make pasta, grab a handful of plain flour and create a well with it.
Take 2 eggs, break them into the well and pinch the flour from the side of the well to blend with the eggs till it all mixes together and thickens into a dough. Add more egg if more liquid is required, remembering the dough should be not to sticky nor dry.
Roll it through the pasta machine to flatten, adding flour to get the right texture.
Then roll it through again with a cutter to make the spaghettini.
Dry the spaghettini by laying it on a tray. Cook in salted boiling water for 20 seconds.
Put the spaghetti into a bowl and dress with extra virgin olive oil, a pinch of salt, chopped chives.
Mix all the ingredients together.
Place the spaghettini in a mound on a plate.
Add the salmon roe on top.
