• 1 jar of apricot jam

  • 1kg easy roll icing

  • 1 kg ready-made marzipan

  • Decoration

  • 250g icing sugar

  • 1 egg, separated

  • Edible food colouring


  • 1.

    Gently heat the apricot jam in a small saucepan so that it melts down and becomes easy to spread.

  • 2.

    Spread the jam over the top of the cake and around the edges.

  • 3.

    Roll out the marzipan very thinly to the circumference of the top of the cake.  Also cut a strip of marzipan that will go around the width of the cake.

  • 4.

    Place the appropriate marzipan pieces around the cake and on top of the cake.  Gently pinch the strip around the top and side to stick them together. Repeat this method with the icing.

  • To decorate:

  • 1.

    Mix together the icing sugar, egg white and a few drops of food colouring into a smooth paste.  Put into an icing bag and decorate as desired.
