Figs and Chorizo

You wouldn't think this would work, but it does and beautifully so. The sweetness of the figs contrasts with the spicy meatiness of the chorizo. A stunning and unusual starter.


  • 450g chorizo

  • 1 small onion sliced length ways

  • 1 tbsp olive oil

  • 110ml Manzanilla Sherry

  • 110g sugar

  • 110 ml red wine vinegar

  • 1 stick cinnamon

  • ½ tsp cloves

  • 6 figs, quartered


  • 1.

    Heat the oil in a medium sauce pan and add the chorizo, onion and garlic and sauté until the onion golden brown.

  • 2.

    Add the sherry, sugar, vinegar, cinnamon and cloves and simmer for 30 minutes. Just before serving, add the figs and heat through.
