Figs and light soft cheese rolled in Parma Ham
Cut the tomatoes in half, season with salt and pepper, drizzle with some extra virgin olive oil and grill for approx. 5 minutes until softened.
Cut the figs in half discarding the skin.
In a bowl, mix the soft cheese and the chives with 1tbls of extra virgin olive oil and add salt and pepper to taste.
Place a slice of ham on a chopping board (length ways). Place ½ a fig at one end. Put a teaspoon of the soft cheese mixture on top of the fig and then place ½ a tomato on the cheese. Very gently roll the figs, cheese and tomato into the Parma ham.
Place three Avvoltini on a plate. Drizzle on some extra virgin olive oil and honey; serve immediately with some toasted bread.
