All meat fans fall in love with these burgers, which can be made in minutes and taste so much nicer than anything you can buy. Do use fresh herbs - they make all the difference.


  • For the burgers

  • 200g minced pork

  • 1 tbsp grain mustard

  • 1 tbsp runny honey

  • 1 tbsp chopped fresh sage

  • 1 tbsp chopped flat parsley

  • 1 egg yolk

  • 2 tbsp breadcrumbs

  • Zest of a lemon

  • 2 finely shallots

  • Accompaniments

  • Sliced red onion

  • Gherkins

  • Capers

  • Shaved Parmesan

  • Olive oil

  • Bag of rocket

  • Bag of watercress

  • Griddled sour dough bread


  • 1.

    Mix burger ingredients together. Build into patties and fry off in olive oil until golden brown.

  • 2.

    Slice and griddle the bread. Place patties in between. Top with the red onion slices, gherkins, capers, parmesan, a drizzle of olive oil, rocket and watercress.

  • 3.

    Serve with a relish of your choice.
