Okay, so it's hardly low fat, but this is truly scrummy when spread on toast or used as a dip. The Gorgonzola gives it a sharp, creamy, pungent edge.


  • 250g carton soft cheese

  • 250g crumbled blue cheese, like Gorgonzola

  • 1 tsp cayenne pepper

  • 1 shallot, finely chopped

  • Parsley to garnish

  • Ciabatta or griddled toast to serve

    Soften a 250g carton of soft cheese by beating with a wooden spoon. Using a fork, mash in 250g crumbled blue cheese such as Gorgonzola and half a teaspoon of cayenne pepper. Spoon into a ramekin and chill until ready to eat. Serve with thin slices of ciabatta griddled, some slivers of fresh shallot and another sprinkling of cayenne pepper.
