Peppery rocket and salty air cured beef are wonderfully complimented with a creamy goat's cheese and vinegar dressing.

Ingredients

  • 100g rocket

  • 50g soft Italian goat’s cheese

  • 30ml white wine vinegar

  • 40ml extra virgin olive oil

  • 40ml ground nut oil

  • 5 extra thin slices of Bresola ham (air-dried beef)

  • Salt and pepper

Method

  • 1.

    Crumble the goat’s cheese in a large bowl and add the vinager and whisk. Slowly whisk in both the oils. Season the dressing and toss the rocket leaves through the dressing. Place the salad in the centre of the bowl. Cover with thinly sliced Bresola. Drizzle any excess dressing over the salad and serve
