Gazpacho

Ingredients

  • 500g very ripe cherry tomatoes

  • 2 large over ripe tomatoes

  • 2 tsp white wine vinegar

  • 2 tbsp truffle oil

  • 100 ml olive oil

  • 2 tsp granulated sugar

  • ½ cucumber

  • 1 baby fennel

  • 2 sticks celery

  • 1 red pepper (deseeded and quartered)

  • Fresh coriander

  • Fresh chervil

  • Garnish

  • 4 large sprigs of chervil

  • 8 chives

  • 2 soft boiled quail's eggs (halved)

Method

  • 1.

    Process all the ingredients except the coriander in a blender, thin with water if necessary season to taste. Put through a fine sieve and chill for two hours.

  • 2.

    Serve in bowls and garnish with eggs, chives and chervil.
