Mango and Coconut Pancakes

This is a great recipe to cook with kids, who don't mind getting messy and have great fun flipping the pancakes. For extra naughtiness, serve with warm chocolate sauce.


  • For the batter

  • 85ml/3 fl oz milk

  • 340ml/12 fl oz coconut milk

  • ½ tsp nutmeg

  • 56.7g /2 oz sugar

  • 283.5g/10 oz flour

  • 28.4g /1 oz sugar

  • 2 eggs

  • 1 tbsp coconut

  • Oil to fry

  • To Serve

  • 1 chopped mango

  • 2 tbsp toasted coconut

  • Clotted cream


  • 1.

    Mix all ingredients together for the batter. Heat the oil in a 6” diameter frying pan.

  • 2.

    Fry the pancakes, flip over, take out and keep warm.

  • 3.

    Serve the pancakes with the chopped mango and clotted cream and sprinkle with the toasted coconut.
