  • 1½ jar luxury mincemeat

  • grated rind and juice 1 orange

  • 2 tbsp rum or brandy

  • 50g (2oz) self raising flour

  • 50g (2oz) fresh white breadcrumbs

  • 1 egg, beaten


  • 1.

    Place the mincemeat in a large basin and add all the remaining ingredients.

  • 2.

    Beat well and spoon into a greased 900ml pudding basin.

  • 3.

    Cover with a circle of greaseproof paper and microwave on high power for 8-10 minutes.

  • 4.

    Allow to stand for 5 minutes before turning out.

  • 5.

    To serve, dust with icing sugar and serve with cream or brandy butter
