Prawn Margarita

This is really quick and easy and can be served as a stylish starter.


  • 350g cooked king prawns

  • 3 spring onion, finely sliced

  • 2 cloves garlic, chopped

  • 1 lime, juiced

  • 1 shot (25ml) triple sec

  • 2 shots (50ml) tequila

  • I handful of fresh coriander leaves

  • 1 handful of fresh mint leaves

  • 1 red chilli, seeded and finely sliced

  • Sea salt and black pepper

  • 200g rocket

  • Granary bread, to serve


  • 1.

    Place all the ingredients in a large bowl toss together well and season with sea salt and freshly ground black pepper.

  • 2.

    Serve on a bed of rocket in cocktail glasses with crunchy granary bread.
