When you want a quick but tasty meal, this yummy, creamy dish really hits the spot.


  • 2 slices thick dense brown bread, preferably wholemeal

  • 80g rough grated Caerphilly

  • 60 ml Welsh dark ale

  • ½ tsp strong mustard

  • Pinch of cayenne


  • 1.

    Toast the bread on both sides.

  • 2.

    In a bowl combine the Caerphilly, ale, mustard, cayenne and some seasoning (more pepper than salt). Once the bread is toasted, spoon the mix on and grill for about 4 minutes.

  • 3.

    Once the rarebit is nicely golden brown on top cut it in half and serve.
