Toast the bread on both sides.
In a bowl combine the Caerphilly, ale, mustard, cayenne and some seasoning (more pepper than salt). Once the bread is toasted, spoon the mix on and grill for about 4 minutes.
Once the rarebit is nicely golden brown on top cut it in half and serve.
