• 4 Slices bread

  • 50 g unsalted butter

  • 225 g matured cheddar cheese

  • 1 tablespoon grated Onion

  • 1 Leek blanched and chopped

  • Rock salt

  • grated Black pepper


  • 1.

    Butter the bread.

  • 2.

    Mix cheese, onion and leek together and place mixture on to the bread (non-buttered side).

  • 3.

    Sprinkle with black pepper and rock salt.

  • 4.

    Cover the sandwich mixture with the other bread slice (buttered side uppermost) then place under grill.

  • 5.

    Toast until crisp and golden, then remove.

  • 6.

    Serve alone or with crisp salad leaves and a vinaigrette dressing.
