Purple Sprouting Broccoli Dip with Pitta Crisps


  • For the dip

  • 225g (8oz) purple sprouting broccoli

  • 3 spring onions, roughly chopped

  • 100g (4oz) soft goats cheese

  • 2tbsp parmesan

  • 80g (3oz) soured cream

  • For the Pitta Crisps

  • 4 pitta breads

  • 2tbsp olive oil


  • For the Dip:

  • 1.

    Steam the broccoli for 5 -6 minutes or until tender.

  • 2.

    Refresh in cold water.

  • 3.

    Place in a processor along with the other ingredients and blend to a puree.

  • 4.

    Season with salt and pepper.

  • For the Pitta Crisps:

  • 1.

    Pre-heat the oven to 180C

  • 2.

    Slice the pittas in half, then into triangles.

  • 3.

    Brush with olive oil and place onto a baking tray.

  • 4.

    Place in the oven for 8 to 10 minutes until golden and crisp.
