Simple and stylish. Serve these warm from the oven or pack them into a picnic box to be eaten cold with a tomato salad.


  • 1 small red onion – chopped

  • 150g feta – cubed

  • 8 sunblushed tomatoes – chopped

  • 4 leaves fresh basil – shredded

  • 1 teaspoon white wine vinegar

  • 1 tablespoon olive oil

  • 2 x cheese pastry tartlets

  • To Serve

  • Mixed salad leaves

  • Sherry vinaigrette

  • Few rounds raw red onion


  • 1.

    Mix together the onion, feta, tomato, basil, vinegar and olive oil and then season.

  • 2.

    Place in the pastry tarts and bake 180ºc for 5 minutes.

  • 3.

    Serve with the salad leaves and Sherry vinaigrette
