• 2 very ripe mangoes, skinned and stoned

  • 2 tablespoonful of Greek yoghurt

  • 2 scoops vanilla ice cream

  • 280ml (½ pint) milk

  • 2 sticks lemon grass


  • 1.

    Smash the lemon grass in a pestle and mortar.

  • 2.

    Boil half of the milk and add the lemon grass.

  • 3.

    Allow to cool.

  • 4.

    When cool remove the lemon grass from the milk.

  • 5.

    Place the milk in a blender together with all of the other ingredients.

  • 6.

    Blend until smooth.

  • 7.

    To Serve-

  • 8.

    Pour into a tall glass and finish with a bendy straw.
