Roasted vegetables and homemade mayo dressing make this chicken club sandwich really stand out.


  • 1 chicken breast, grilled

  • 1 roasted red pepper, chopped

  • 1 roasted aubergine, chopped

  • A handful of radicchio or rocket

  • Two slices of good bread, such as focaccia or olive oil bread

  • Dressing

  • 2 tbs mayonnaise

  • Juice of 1 lemon

  • 1 clove of garlic, chopped

  • 1 red chilli, very finely chopped

  • A handful of flat-leaf parsley, finely chopped

  • Good-quality salted crisps, to serve


  • 1.

    Layer the chicken, pepper, aubergine and the radiccio on a slice of bread. Combine the salad dressing ingredients and drizzle on top of the sandwich. Top with another slice of bread, cut in half and spear with cocktail sticks. Serve with potato crisps.
