A deluxe version of chocolate mousse, this recipe brings you the ultimate in chocolate heaven.


  • 175g/6oz bitter chocolate, chopped

  • 5 egg yolks

  • 125g/4½oz caster sugar

  • 6 tbsp Grand Marnier

  • 185ml/6fl oz cream, whipped

  • 2 tbsp cocoa powder

  • 2 tsp grated orange zest

  • 4 oranges


  • 1.

    Melt the chocolate in a bowl set over a saucepan of simmering water.

  • 2.

    Place the egg yolks and caster sugar in a separate bowl and beat until they are pale in colour and thickened.

  • 3.

    In another separate bowl, add four tablespoons of Grand Marnier to the whipped cream and whisk to soft peaks.

  • 4.

    Combine the chocolate with the egg mixture and mix. Fold the whipped cream into the mixture. Fold in the cocoa powder. Add the orange zest.

  • 5.

    Spoon into individual serving ramekins or espresso cups and refrigerate for a minimum of two hours.

  • 6.

    Peel the oranges with a sharp knife and cut them into slices. Put the orange slices in a bowl with the remaining Grand Marnier. Serve alongside the ramekins of mousse.
