Tomato and Bocconccini Salad

Life in the fast lane can mean the first thing to drop away is a healthy diet.
This salad recipe of Pete Evan's is healthy, fast and delicious.


  • 4 vine ripened Tomatoes

  • 2 medium Buffalo Mozzarella

  • 16 basil leaves

  • 3 tablespoons Extra Virgin Olive Oil

  • 1 tablespoon Balsamic vinegar

  • Salt & Pepper

  • 20 Ligurian olives or manzanillo

  • 1 packet grissini sticks


  • 1.

    Slice tomatoes & mozzarella and lay on a platter overlapping with basil leaves dressed in the olive oil.

  • 2.

    Drizzle the balsamic over the salad, scatter with olives and season with salt & pepper.

  • 3.

    Serve with Grissini bread sticks
