Try this delicious Indian inspired dish for spiced mango chicken.
Pre-heat oven to 375oF / 190oC.
Heat half the oil in an oven proof pan, season the chicken and cook for 2 minutes on each side,
Meanwhile mix all of the spice ingredients together and spread over the chicken.
Place pan in the oven and cook for approximately 15 minutes depending on the thickness of the chicken.
Whilst the chicken is cooking, make the raita. Mix together all of the ingredients and season to taste with sea salt.
Then prepare the salad, mix all of the ingredients together and dress with lemon juice, olive oil and white wine vinegar. Season to taste.
To assemble, place a poppodum flat on each plate, top with salad, half the raita, sliced chicken then remaining raita. Break popodum into 3 pieces and stand upright in raita.
