Brussel Sprouts with Chilli & Speck

Most of the time Pete cooks gourmet so when he's home he loves to take a bit from work but mostly likes to keep things wholesome and homely. These brussel sprouts are a favourite of Pete's.


  • 20 Brussels sprouts

  • 100 g cubed Speck

  • Chilli Flake

  • sea salt

  • cracked pepper

  • 1 Lemon Zest

  • 1 tablespoon Butter


  • 1.

    Take the ends of the sprouts and make a cross incision in the bottom to allow the flavours to permeate into the sprout.

  • 2.

    Place in a baking tray with the speck, butter, salt & pepper and cook for 25 minutes on 200 degrees Celsius (you may like to cook the speck for 10 minutes prior to get it crispy).

  • 3.

    Take out of the oven and toss over the chilli flakes and lemon zest.
