Udo's delicious snapper is cooked on the barbie and is easy and delicious.


  • 1.5 Fillets of Snappers per person

  • Butter

  • 1 small Chilli finely chopped

  • 1 teaspoon chopped Coriander root

  • 1 teaspoon chopped Lemongrass

  • 1 teaspoon chopped Ginger

  • 1 teaspoon chopped Garlic

  • 1 teaspoon chopped eschallot

  • Salt & Pepper

  • Olive Oil

  • Soy sauce

  • finely chopped coriander leaf

  • finely chopped for garnish shallot


  • 1.

    Lay a piece of alfoil out, rub some butter on the middle and place the fillet skin side down on top.

  • 2.

    Add the chopped garlic, ginger, coriander roots, lemongrass, chilli, drizzle of olive oil, drizzle of soy sauce, salt and pepper.

  • 3.

    Wrap the fish up with the foil into a parcel shape, place onto the BBQ and cook for about 10 minutes or until

  • 4.

    Fresh is white all the way through.

  • 5.

    Serve with steamed rice and steamed bok choy.

  • 6.

    Pour some oyster sauce over the bok choy before eating.
