This versatile cream cheese frosting can be used on many different cake flavours.


  • 125g/4½oz cream cheese or mascarpone

  • 250g/9oz icing sugar

  • 90g/3oz unsalted butter

  • ½ tsp vanilla essence

  • ½ lemon, juice only

  • Shop bought cake


  • 1.

    Place the ingredients in a food processor and blend until smooth,

  • 2.

    Use to garnish shop bought cakes, like ginger cake.
