Vinaigrette

Just the thing for a salad with a difference.

Ingredients

  • 150 g Palm Sugar

  • 1.2 L Extra Virgin Olive Oil

  • 300 ml red wine vinegar

  • 350 ml sherry vinegar

  • 6 Garlic Cloves finely chopped and pounded

  • 1 bunch chervil finely chopped

  • 1 bunch chive finely chopped

  • sea salt

  • freshly ground Black pepper

Method

  • 1.

    Caramelise the palm sugar, remove from heat and carefully whisk in the red wine vinegar and sherry vinegar.

  • 2.

    Slowly incorporate the olive oil then add the garlic, herbs, salt and pepper.
