These cheese and watermelon stacks look so pretty on the plate and make a great snack at picnics and buffets. In Greece and Turkey they would be eaten at breakfast, with plain yoghurt.


  • Pack haloumi cheese, sliced

  • Diced, de-seeded Watermelon

  • Bunch seedless grapes, halved

  • Handful fresh mint

  • Squeeze lemon juice

  • Drizzle olive oil


  • 1.

    Grill the haloumi cheese or cook the haloumi on a griddle pan.

  • 2.

    Mix the watermelon, grapes, chopped mint and lemon juice together.

  • 3.

    Make a tumbling stack, layering cheese and the watermelon mix. Drizzle with olive oil.
