An easy summer dip or sandwich filler, this is also a good way of using up leftover bits of blue cheese.


  • 6oz blue cheese

  • 7oz sour cream

  • 3oz mayonnaise

  • ½ tsp salt

  • 1 tsp white pepper

  • 1 tbsp basil, chopped

    Put all the ingredients in a food processor and blitz until the mixture is at a soft consistency. Put into a bowl. Serve with assorted vegetables, baked potatoes or sticks of carrot and celery.
