Make this when you want light, lovely Asian flavours.
In a bowl, mix the turmeric, lime juice and salt. Add the prawns and allow them to marinate for 15-20 minutes in the fridge. Heat the oil in large non-stick frying pan and sauté the garlic over a medium heat for 1 minute. Add the prawns, paprika and chilli and stir-fry for 2 minutes.
Add the remaining ingredients and stir carefully for 1 minute.Seconds before you finish cooking, toss the salad leaves into the mixture then serve at once. Garnish with a wedge of lime.
