A great recipe for this creamy and savoury cod dish, perfect to warm you up in winter.
Crush the basil, garlic, one teaspoon of olive oil, lemon juice and flaked raw cod fillet in a pestle and mortar until they form a paste. You can also use a food processor for this.
Mix this paste to the hot mashed potato, nutmeg,cream and butter then set aside.
In a very hot pan sweat the halved red pepper with bay leaf, thyme, remaining olive oil, salt and pepper and a pinch of sugar.
Once you have browned the peppers slightly add a splash of water to steam.
Put a lid over this immediately and put straight into the oven at 200ºC for two minutes.
Take the pepper from the oven and fill with the fish paste topped with a thin slice of cheddar cheese and a sprinkle of paprika. Return to the oven and cook for twelve minutes.
Serve with croutons.
