Got the baking bug? These melt-in-the-mouth biscuits make a sweet afternoon snack. Or you can stack them up with raspberries and ice-cream for wicked treat.

Ingredients

  • 2 oz butter

  • 2 oz caster sugar

  • 1 ½ tsp golden syrup

  • 6oz self raising flour

  • ½ tsp bicarbonate of soda

  • 1 tsp ground ginger

  • Fresh raspberries, to garnish

  • Tub of good-quality vanilla ice cream

Method

  • 1.

    Melt in a pan the butter, sugar and golden syrup. Add the remaining ingredients to the pan and mix together. Roll the mixture out and cut into cookie shapes using a biscuit cutter. Put onto a non stick baking tray and bake in the oven for about 10mins at 350 degrees. Serve warm with vanilla ice cream and a few fresh raspberries.
