This is a million miles away from the lumpy tapioca of childhood. Dreamy and creamy, it's topped with juicy tropical fruits.
Soak the tapioca in the milk to reconstitute and then wash and drain. Next simmer the cream, milk and vanilla pod and then add the washed tapioca and cook until thick and tender.
Whisk together the egg yolks and caster sugar and combine with the tapioca, if too thick, then add a little milk.
Allow to cool and then pour into a serving dish. Garnish with the tropical fruits.
