Kids love this recipe, and it's easy for them to cook too. If they turn their nose up at creme fraiche, serve with mayonnaise or good old tomato sauce.

  • 1 sweet potato, peeled, boiled and mashed

  • 2 spring onions, chopped

  • Pinch ground coriander

  • Pinch ginger

  • 1 teaspoon chopped red chilli

  • 2 rashers smoked bacon, cooked until crisp and golden

  • 1 egg

  • 200g plain flour

  • 2 tablespoons olive oil

  • To serve

  • 2 tablespoons crème fraiche

  • Few salad leaves

  • 1.

Mix together the mashed sweet potato, bacon, onion, coriander, ginger, chilli and egg. Mix in the flour until it comes together to a nice dough. Flour a chopping board and roll out to 2cm thick, cut into rounds the size of a tumbler. Heat the oil and fry until golden on both sides.

  • 2.

Serve with a dollop of crème fraiche.
