Gherkin Salad

Gherkins go with meat, fish and cheese! Make this versatile salad for picnics or serve it at a barbecue with home-made burgers, grilled meat and fish.


  • 4 gherkins

  • 3-4 new potatoes, cooked then cooled

  • 2 spring onions, sliced

  • 2 rashers pancetta, sliced into lardoons

  • 25g / 1 oz cherry tomatoes, halved

  • 25g / 1oz rocket leaves

  • 2 tbsp sour cream

  • 1 tbsp chopped chives

  • Salt and pepper, to season


  • 1.

    Slice the gherkins finely and place in bowl with the rocket leaves, halved cherry tomatoes and the spring onion.

  • 2.

    Heat a little oil in a pan and add the pancetta fry until golden then add the new potatoes which have been sliced.

  • 3.

    Toss in the pan for a minute and season.

  • 4.

    Place in the bowl and toss together. Serve on a plate. Add the chopped chives to the sour cream and then season. Drizzle over the salad.
