This makes a quick and easy tomato sauce for pasta or pizza. Enjoy it as it stands or use it as a base and add to it - basil, bacon, olives are all good.


  • Tin of tomatoes

  • Sprig thyme

  • 1 onion

  • 2 cloves garlic

  • Olive oil


  • 1.

    Chuck the tin of tomatoes in a blender with thyme, onion, garlic and a good glug of olive oil.

  • 2.

    Blitz until smooth.

  • 3.

    Then pop in a pan with a lid and simmer for 15-20 minutes.

  • 4.

    Use as a tomato sauce or basis for other sauces.
