Home late? This spicy smoky seafood pasta can be on your plate in five minutes flat. Angel hair pasta cooks in a jiffy, but you can use spaghetti or linguine too.

  • 60ml good olive oil

  • 3 garlic cloves, crushed

  • 2 fresh red chilli, finely chopped and deseeded

  • 450g cherry tomatoes, cut in half

  • 400g angel hair pasta,

  • 2 tins of smoked mussels. drained

  • 100g grated Parmesan

  • 10 Basil leaves, ripped

  • 1 tbsp chopped parsley

  • 50 ml white wine

  • 1.

Heat the oil in a pan and add the garlic, chilli and cherry tomatoes and sauté for about 5 minutes until the garlic is soft, make sure that you cook over a medium heat as you do not want to burn the garlic. If you wish at this point you could discard the garlic because the olive oil would have already infused.

  • 2.

Cook the angel hair according to pack instructions and drain thoroughly.

  • 3.

Add the pasta, mussels and Parmesan to the pan with a little of the water from the pasta pot and toss to combine, serve immediately with a sprinkling of fresh basil and parsley.
