Believe it or not, strawberries and balsamic are a classic pairing. One nibble and you'll see why! Make these extra fun and yummy by cooking on the barbecue.


  • 450g strawberries

  • 4 tbsp dark brown sugar

  • ½ cinnamon stick, broken

  • 2 tbsp balsamic vinegar

  • 30ml port

  • Good quality vanilla ice-cream, or clotted cream to serve


  • 1.

    Hull the strawberries and place in a large bowl. Tip in the other ingredients and mix well.

  • 2.

    Cut 4 x 10 inch squares of thick foil and divide the strawberries and any marinade between the foil sheets.

  • 3.

    Scrunch together to make parcels and cook on a hot griddle for a few minutes. Serve in the foil or in a dessert bowl with a dollop of clotted cream.
