The Merguez sausage is spicy, oily, pungent and fantastic served in a baguette with home-made potato salad on the side.
To make the sandwich, layer all the ingredients in a buttered baguette. For the potato salad, mix the olive oil, lemon juice and mustard and mix with the halved potatoes. Sprinkle with Paprika. Add the chopped garlic, spring onions and the red onion. Pile on a plate.
