The Merguez sausage is spicy, oily, pungent and fantastic served in a baguette with home-made potato salad on the side.


  • 1 baguette, split, oiled and grilled briefly.

  • 4 Merguez sausages, grilled

  • Handful of rocket leaves

  • Grilled and skinned red peppers

  • A tbsp of rouille (mayonnaise, lemon juice, chilli, garlic, cayenne and ketchup mixed together)

  • For the potato salad

  • Glug olive oil

  • 1 tbsp lemon juice

  • 1 tsp whole grain mustard

  • 200g boiled salad potatoes, warm, halved

  • Spring onions, chopped

  • A good pinch paprika

  • 1 finely chopped red onion

  • 1 clove garlic, very finely chopped

    To make the sandwich, layer all the ingredients in a buttered baguette. For the potato salad, mix the olive oil, lemon juice and mustard and mix with the halved potatoes. Sprinkle with Paprika. Add the chopped garlic, spring onions and the red onion. Pile on a plate.
