Cardinal Granita

A very elegant and easy summer dessert. Spoon into cocktail glasses and decorate with a sprig of mint.


  • 650ml red wine

  • 100ml cassis - blackcurrant liquer

  • Juice of ½ lemon

  • 1 tbsp caster sugar


  • 1.

    Mix all the ingredients together then pour into a plastic container with a lid.

  • 2.

    Put in the freezer and stir with a fork every 2 – 2 ½ hrs to break up the crystals.

  • 3.

    The granita will be ready in about 8 - 10 hours.

  • 4.

    Spoon into chilled martini glasses and finish with a leaf of mint.
