Yum, yum, yum! Everyone loves potato salad so make plenty of this and watch it disappear.


  • 4 boiled potatoes, cut into bite-size chunks

  • ½ cup diced celery

  • ½ cup diced onion

  • ½ cup diced mixed peppers (red, green and yellow)

  • ½ cup cucumber relish 

  • 1 cup mayonnaise

  • 3 tbsp American mustard (mild). Add more if needed

  • Salt and pepper


  • 1.

    Boil potatoes in their skins. Once cook, allow them to cook, peel them and cut into small bite size pieces. Place in a bowl and add the rest of the ingredients. Mix well, if the mixture is dry add more mayonnaise.
