  • 1 whole Rainbow trout

  • 1 banana Chilli

  • 1 clove Garlic

  • 5 Cherry tomatoes

  • 8 leaves Sage

  • 1 Lemon juiced

  • 8 Ligurian Olives (if you’re including them)

  • Sea Salt & pepper


  • 1.

    Heat a heavy based cast iron frying pan

  • 2.

    Add a touch of oil

  • 3.

    Place the whole fish in pan

  • 4.

    Flip over after 3-4 min

  • 5.

    After it’s been turned you can make your sauce with fish still in there – this is a burnt butter and sage sauce so first add the butter and wait until it turns a nut brown colour

  • 6.

    Add garlic, chilli, sage, lemon juice (the lemon juice will stop it from burning and spoiling), cherry tomatoes, olives, salt and pepper
