Kid-friendly Vegetarian Frittata

Ingredients

  • 4 tablespoons extra virgin Olive Oil

  • 3 Eggs beaten

  • 2 Zucchinis sliced

  • 2 medium Potatoes thinly sliced

  • 1 small Sweet potato thinly sliced

  • 2 brown Onions thinly sliced

  • 1 cup cheddar cheese grated

  • 3 Cloves Garlic crushed

Method

  • 1.

    Using a heavy based frypan, heat the olive oil on a medium heat.

  • 2.

    Fry onions and garlic for approximately 10 mins or until caramelised.

  • 3.

    Add the potato, sweet potato and zucchini (mix well), cook for approximately 30 minutes with lid on.

  • 4.

    Add egg and sprinkle the cheese on top and place under the griller until the cheese has melted and browned.

  • 5.

    Serve with salad.
