Using a heavy based frypan, heat the olive oil on a medium heat.
Fry onions and garlic for approximately 10 mins or until caramelised.
Add the potato, sweet potato and zucchini (mix well), cook for approximately 30 minutes with lid on.
Add egg and sprinkle the cheese on top and place under the griller until the cheese has melted and browned.
Serve with salad.
