• 1 punnet button mushroom

  • 1 Spanish Onion chopped into large pieces

  • 1 Pineapple skinned and chopped into large pieces

  • 2 red or green Capsicums de-seeded and chopped into large pieces


  • 1.

    Preheat BBQ to High.

  • 2.

    Thread onto pre-soaked skewers in random order, the mushrooms, capsicum pieces, pineapple pieces and Spanish onion pieces.

  • 3.

    Turn BBQ down to medium and place skewers on BBQ. Drizzle with a little olive oil.

  • 4.

    Serve with a little fresh parsley.
