Salsa is the Mexican and Spanish name for sauce. It can signify cooked or fresh mixtures and they can range in spiciness from mild to mouth searing.


  • 2 Chicken leg and thighs, boned and flattened

  • Extra Virgin Olive Oil

  • 3 Cloves Garlic

  • 2 long Red chilli's split and de-seeded

  • sea salt

  • freshly Ground black Pepper

  • of 1 Lemon

  • Salsa

  • 2 Cloves Garlic

  • Pepper

  • 1 long Red chilli split, de-seeded and roughly chopped

  • 1 large ripe Tomato peeled, skinned and diced

  • 2 tablespoons toasted Almonds

  • 1 tablespoon Parsley leaves

  • red wine vinegar

  • 1.

    Marinate the chicken pieces in the olive oil, garlic, chilli, salt and pepper.

  • 2.

    Squeeze the lemon juice over the chicken.

  • 3.

    Place the chicken on a hot BBQ and cook through, turning once.

  • 4.

    To make the salsa, pound the garlic and salt in a mortar and pestle, followed by the chilli.

  • 5.

    Add the tomato and a little extra salt, the almonds, parsley, red wine vinegar, olive oil and pepper. Place aside.

  • 6.

    Plate up the chicken and serve the salsa on the side.

  • 7.

    Drizzle a little more olive oil over the top.
