• 4 Lamb Cutlets

  • 2 tablespoons basil Pesto

  • 1 teaspoon finely grated lemon rind

  • 3 tablespoons Butter


  • 1.

    Preheat oven to 180C.

  • 2.

    Combine basil pesto, lemon rind and butter.

  • 3.

    Place each cutlet in an envelope of foil and dollop a tablespoon of mixture on top of all the cutlets.

  • 4.

    Fold the top of the foil over to seal and cook for 50 minutes.
